It's a Recipe!: Taco Bake

I love to really make a night of it and cook a big meal, but let's be honest... most nights there just isn't the time for that kind of involvement.  I seriously appreciate meals that can be made ahead of time & then popped in the oven laterNaturally, you think of lasagna when you think "prep now, cook later", but lasagna can take a while to prepare.  I don't always have that time... neither do you, I know.  "What is it that I do have time for?", you ask?(I asked for you... you're welcome.)
TACO BAKE!
I love me a taco bake, y'all!  It's yummy & quick & you only have to "dirty" two dishes b/c clearly you need to eat this on a paper plate.  You don't?  Well, whatever... we do!  Some things are meant to be eaten on a paper plate & taco bake is one of them :)
 Ingredients: 
Large tortillas
1 can refried beans
1 bag shredded cheese
1 pack taco seasoning
1 lb ground beef 
(may substitute beef with ground turkey or shredded chicken)

optional toppings:
shredded lettuce
tomato
avacado (or guacamole)
salsa
sliced jalapenos
sour cream
green onions
[whatever else your heart desires... but don't let your heart desire that liquid jalapeno cheese, cause it. was. gross! Thank goodness I tasted it before I used it on the dish!]

Cooking Instructions:
-In a medium skillet(dirty dish number one), brown 1 lb ground beef(or meat of your choice)
-Drain excess fat
-Follow directions on taco seasoning packet (usually add seasoning & 1 1/2 cups of water)

-In a pie plate/round baking pan/tart pan (Your second and final dirty dish!)
layer tortilla, beans, beef & cheese
Repeat 3 more times
(If you're prepping this in the morning, go ahead and cover it and pop it in the fridge now!)
-Bake covered at 375 degrees for 15 minutes
-Uncover & bake for 10 more minutes
-Top it how you like it & Nom nom nom!
Make this recipe lower in fat by using:
-lean ground beef, turkey or chicken 
-greek yogurt in place of sour cream
-low fat cheese

I turned on Oprah yesterday while I was working & Barbara Streisand was singing "The Way We Were".  & It's official... I'm a big fat baby who cries when she hears that song.  Not necessarily because of the song(which is lovely), but because when you hear it you tend to replay the movie in your head & I don't know about you, but it's just one of those movies I cannot get through without a few tears rolling down my face.

Robert Redford is looking old & it hurt my heart a little.  He's still handsome though!

 Got this seriously cute fabric for boy bibs & ohmagoodness, I love it :)
I have a hard time finding boy fabric I love, so i was so stoked when I spotted this one!

Saturday Happiness: Blog Friend Style

Last Saturday was the bees knees.  That's right... the knees of the bees!  I got to wrap my arms around Julie, Melanie, Trish, Summer & Daphne and spend a little face to face time laughing and chatting.  Each and every one of them is just what you see on their blogs & even more.  It just felt like hanging out with old friends & that made me oh so happy. I snagged these from Julie because my camera conveniently croaked as soon as I pulled it out to take a picture.



It's a strange feeling to sit and talk with women you have never spent face to face time with(I have met julie girl once before, but it was a quick lunch!) and feel like they already know you.  Maybe they don't know your mannerisms like the friends who have been around forever, but they know your heart & your personality. The things we share on blogs, are sometimes from the innermost dwellings of our hearts.  We escape here to write out what our hearts and brains are feeling & usually(for me, anyway) besides discussing it with my boyfriend or sister... this is the only place it's spoken of. I am lucky to have found you all, who genuinely care & fill my inbox with love.
 I eyed this top in a boutique last time I was in the city & then saw it on Mod Cloth & stalked it a bit... so I decided to cave and buy it for myself!  I scooped it up after I left the girls on Saturday & after taking it in a bit(they didn't have my size), it fits perfect & i love it!  Don't you love the sweet umbrella print?  I like quirky little prints :)

I posted this without a title... and it was weird.

 Mardi Gras was a whirlwind!  We attended parades every weekend & squeezed as much fun out of it as we could... ya know, until we literally couldn't handle any more.

First Exit: Random Town

I have to speak a truth to you today. It's a biggie, so drink it in slowly.
I don't give a crap about William & Kate's upcoming nuptials.
That's right, not one single crap do I give.
[Whew, that felt good.]

Alright, alright... when they show a photo of her dress, I will PROBABLY, MAYBE take a little sneaky peaky. But just a little one.



Tonight, I read a story in People magazine about the Chilean miners ordeal.
I put it off and put it off and put it off b/c I honestly thought I'd heard everything there was to hear about these guys fifteen times over. But as I skimmed through my bath time reading material, I realize it was all that was left.

Anywayyyy, I was so wrong about hearing everything there was to hear, because People magazine pulled up a few gems for me!
After they received food and water, the men began to re-gain their sexual appetites and requested some type of services to help them out. (Ew.) Someone had 10 blowup dolls to offer them, but they feared they would begin to fight over them (this makes me laugh), so instead they were sent down porn & pinups. Did you hear this?

Maybe I just stopped paying attention at some point? THEN they went on to say that some men were having weed sent down to them & then breaking off into cliques to smoke it. Others began to resent them for not offering them a sweet toke.
I am genuinely disgusted with just about all of that. I mean, YOU ARE TRAPPED IN A MINE for goodness sake! You're getting in arguments over weed and porn? So much for a "renewed sense of self" and whatnot.


Last night, in an attempt to help me relax and fall asleep, MR was softly rubbing my face with his fingertips. He would start at the outside of my face & make his way in circles to the tip of my nose. I have to tell you it was pretty stinkin' relaxing. He says to me(while still rubbing my face),in a soft and sweet voice, " Think of some place you feel completely relaxed. Just go to that place & soon... you will be asleep."

Then, as if he were joking, his hand stopped moving and lay there all heavy and limp like on my face. HE. FELL. ASLEEP. I began laughing so hard I woke him up and completely lost all of the relaxation vibes I was groovin on. Nice attempt, MR.

It's Thursday & Mardi Gras is officially over. I say it's over NOW and not yesterday b/c everyone's hangovers should be gone today. So today ends the Mardi Gras season!

It's Friday & I Like it!

Today I am thankful for: the rain. Even though it's probably going to ruin some of my fun Mardi Gras weekend, I am really enjoying it right now. Also... that means I don't have to water the plants today!

My best friend is: my MR, my Sister & my lifelong friend Lulu.

A quirky thing about me is: I can't stand the texture of cotton balls or dry towels(I will wet my hands before grabbing towels out of the dryer).

This weekend I: am going to be in the city to celebrate Mardi Gras. Lots of big amazing parades this weekend!

Something that worries me: I try to worry as little as possible. What's gonna happen is gonna happen.

On my nightstand you would find: my earrings, body lotion, lip balm & a picture of MR!
